Guinness-Chocolate Cream Sandwiches

What do you do when you’ve run out of cupcake liners but not batter? Make little cream pies, that’s what. I had some Guinness-chocolate cake batter after the last batch of Irish Car Bomb cupcakes, so I filled my mini-cupcake pan with what was left. When I tried to pop them out, it seems that neither the non-stick coating nor the non-stick spray I used did their jobs (useless science slacking off on the job…), so I had some pretty janky-looking *delicious* cake chunks on my hands. Chocolate mini cupcakes that don’t look great on their own + frozen tub of Cool Whip + the ability to cut said cupcakes in half without fear of them looking stupid = cold yummy treat for those hot days that are approaching here. Not that they lasted much after this fun little photo shoot.
